Pie Day 2011

For Pie Day January 23, (2011) I made a Strawberry and Rhubarb Pie..which has always been one of my favorite pies.

It comes from the mid-west and from the Canadian farmers. The more you pick it, the more it grows and gives you stocks. This pie is a traditional dessert throughout the U.S. South including the Appalachian regions, and is part of New England cuisine. Rhubarb pies and desserts are popular in Canada too since the rhubarb plant can survive in cold weather climates.

Did you know that rhubarb originally came from China? It’s a member of the buckwheat family.

Here’s my recipe for a Strawberry & Rhubarb pie.
2 cup of Rhubarb
2 cup of Strawberries
1/4 cup of Agave or your favorite sweetener
add cinnamon, nutmeg if you wish.

Pour it into a pastry crust whether you make your own or buy the crusts frozen. If you like a top on the pie, just use two bottoms, on top of each other. This will work, when you buy your crusts.

Bake at 400 degrees for 30 minutes.
