During the Stuart and Georgian times, in the UK, mince pies were a status symbol at Christmas! Very rich people liked to show off at their Christmas parties by having pies made is different shapes (like stars, crescents, hearts, tears, & flowers); they fancy shaped pies could often fit together a bit like a jigsaw! They also looked like the ‘knot gardens’ that were popular during those periods. Having pies like this meant you were rich and could afford to employ the best, and most expensive, pastry cooks! Try this Mock Mince Pie recipe..

2 cups of tart apples
1 cup raisin
1 cup brown sugar
1/4 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp salt
1 cup thick sour cream

Mix apples, rains, sugar, spices, salt with our cream together. Line the pie pan with pastry, dust with flour pour in fill-in and cover with a top crust. Bake in very hot over of 450 degrees for 10 minutes; reduce the heat to 350 F and bake for 45 minutes or longer until apples are tender. Serve hot.

One year I made a type of mincemeat of where in a gallon jar I put in a selection of fruits and nuts with 1/2 cup of rum and marinaded for about two months. By the time Christmas, came I made a pie, it was much too sweet. I added some apples to take out the sweetness. It was delicious.
