Paring Ice Wine with our Wine Pies is a perfect match when you want to enjoy our Rhubarb & Strawberry pie called “Blissful”

It’s a type of dessert wine produced from grapes that have been frozen while still on the vine. The sugars and other dissolved solids do not freeze, but the water does, allowing for a more concentrated grape juice to develop. The grapes must be pressed from the frozen grapes, resulting in a smaller amount of more concentrated, very sweet wine.

Ice wine production is limited to that minority of the world’s wine-growing regions where the necessary cold temperatures can be expected to be reached with some regularity. Canada and Germany are the world’s largest producers of ice wines. Napa valley is starting to develop ice wine. About 75 percent of the ice wine in Canada comes from Ontario.

Ice wine is a very sweet wine that is made from grapes that were left to freeze while still on the vine. The freezing concentrates sugars in the grapes, which gives a smaller yield of much sweeter wine. Ice wines are made from a variety of grapes, including Riesling, Vidal, Cabernet Franc, and Merlot. All ice wines are very sweet and are considered ‘dessert wines’.

Rhubarb tends to be very tart, adding sugar or some Agave is needed to sweeten it up. Adding the Strawberries compliments it very well. It’s a really big favorite if you come from the mid-western states or Canada.
