Cobbler Topping in the Making

August 6, 2010

PJ & I are making the Cobbler topping for the plum cobblers we are going to make. We has such a blast, 3 of us Girlfriends got together to make pies and cobblers. PJ, has decided to be my pie princess apprentice..This is funny!

Here’s the recipe for the Topping:
1.5 cups of flour
1.5 cups of oats
1 cup of brown sugar
1/2 cup of melted or soften butter
1 tsp of salt
Mix them together add whatever you want for spices – cinnamon, nutmeg, orange zest would be good.
This recipe made a finer crumb for the topping.

Rita’s recipe she increased the sugar to 2 cups and 1 cup of butter..

In this video, Rita is making her pie – and showing how we are finishing up the Port Tarts.

Rita put a variety of flavors in her pie dough including, crushed peppers, cinnamon, lemon and cardamon. In the Plum filling she added 2 cups of sugar, 1/4 cup of grated orange rinds or orange zest, 2 Tablespoons of butter. In her topping she made it with cinnamon, brown sugar, oats, and butter so it was chunky, not like mine. (mine was blended to a medium peas size.)

Enjoy!
