Hot Raisin Pie

One of the favorite pies my dad loved was a Hot Raisin Pie, one that was just fresh out of the oven.

Here’s a Apple & Raisin Pie Combo
4 cups sliced apples
1 cup water
1.5 teaspoons flour
1/2 cup sugar
1/4 teaspoon of cinnamon
1 cup raisins
2 Tablespoons butter

I always find pre-cooking the apples a bit, leaves them softer for the pie. It’s up to you.

Thinly slice the apples into slices and place on the bottom of a pie pastry. Shift in your sugar, flour and cinnamon. Then add the raisins on top, dot with the butter. Cover with a lattice top or full pastry cover. Bake at 450 degrees for 10 minutes; reduce the temperature to 350 degrees and bake 40 minutes longer or under the fruit is tender. Makes 1 9″ pie.

Variations of the pie would be to not add the apples.. or use another fruit of your choice.

Honey Raisin Pie

1 cup of orange juice
3 Tablespoons lemon juice
2/3 cup cold water
1/2 cup honey (or use an alternative)
1/4 teaspoon salt
Grated rind of 1/2 orange
3 Tablespoons of cornstarch
1 2/3 cups seedless raisins
1 Tablespoon flour
1 Tablespoon butter

Combine orange juice, lemon, cold water, honey, salt and grated rind together – boil. Mix cornstarch with a little of cold water stir until melted, add to the fluid that is boiling. Stir consistently until it starts to thicken. Remove from heat. Sprinkle the flour and butter on the bottom of the pastry shell. Add the raisins into the heated mixture until well mixed and pour onto the pastry.. Cover with a pastry top, or lattice top. Bake in a hot oven 425 degrees F 35-40 minutes. Serve warm. This will make a 9″ pie.
