Chard and Feta Pie is guiltless one of my favorite recipes to make the original recipe I’ve mixed it up by adding different ingredients. Just by experimenting
Here is goes, this serves 8 plus people
2 cups of shredded potatoes (2 large potatoes) or 1 package of frozen potatoes any flavor
2 green onions minced
3/4 teaspoon salt
1/4 cup flour (reg or GF)
1/4 teaspoon blk pepper
2 Tablespoon olive oil
1 small onion chopped
2 garlic cloves chopped
2 bunches or red or green chard or use spinach or both
1.5 cups crumbled feta
1 cup milk
2 Tablespoons chopped fresh oregano
Preheat oven to 350 degrees bake for 35 – 45 minutes
In the original recipe they used a pie crust this is optional, it will use a 9″ pie shell or square pan.
Place potatoes on the bottom, (after you have drained out the excess water) green onions.
In a bowl add your eggs, milk, flour, pepper, spices, chopped onions, garlic cloves, together, beat well together.
Layer, chard (leafs & stems) and cheese, I usually add extra cheddar cheese about 1 cup of shredded or your choice. Once your have everything layered, pour over the egg mixture.
Once throughly baked, let stand for 15 minutes before serving. Serve with meat, bread or soup are all options. This is a great dish for gatherings, I usually double the recipe so I can cut it up and freeze for another day.
