Gluten Free Banana Bread this recipe turned out great. What’s so cool with this recipe is you can add different ingredients to create a different consistency.

For each batch you make, may be different.

3 eggs                                                                                   1 tsp cinnamon

1  2/3  cups of sugar                                                          1 tsp nutmeg

1 cup oil – vegetable oil not olive oil,                              1/4 cup nuts, walnuts

1.5 tsp vanilla                                                                      2 cups banana about 3 bananas

3 cups of flour                                                                     2 cup raisins

1 tsp baking powder

1 tsp baking soda

1 tsp salt

Also add 2 cups zucchini or 2 cups shredded carrots or shredded apples or add whatever you want that will equal 2 cups.

For the flour I sometimes substitute 1 cup of flour with oatmeal.  Gluten free flour, I use one to one flour. I don’t recommend to only use coconut flour – if you are going to use this flour blend it with other flours, plus you will need Sorghrum to add to the flour, if they don’t  have it.

Beat eggs, sugar, oil and vanilla until blended. Mix together the rest of the ingredients. The batter is very thick. The zucchini or carrots will provide moisture for the batter.

Place in greased loaf pans, bake at 350 degrees for 1 hour. (it also will depend on the temp of your oven.) Makes 2 loaves.
